The X-ray thing is interesting. Not entirely sure how I feel about it, but it definitely works for the artist, so that's cool. (as an origami artist myself, we often get fussy about the specifics of our craft, which can be pretty amusing. I digress.)
I love Between the Folds, and can't recommend it enough. Since it got picked up by PBS' Independent Lens, it's often played on your local PBS station (US only, that is):

Yeah, I'm going to highly recommend Between the Folds as well. While I can still knock out a paper crane, it's like Chopsticks compared to the Rachmaninoff concertos in the movie.
