Jell-O has got to be the world's least trustworthy dessert. It's all "hey lookit me I'm so solid!" when really it's just a cube-shaped liquid. Wily bastards.

That is a nearly synesthesiac experience. I can feel that jello kiss, as it releases from the shiny surface, like another dream of love some red, square soap bubble that does not break, but escapes. I don't even eat jello, but the red, and shadowed sides, and the light that licks along the front panes, certainly makes it a desirable substance, not to mention that oh so fast camera, I desire the camera even more.

I love how when it first hits the solid surface, it moves like liquid splashing, but once it spreads out enough, it seems to remember what it really is.

There's a far worse secret behind Jell-O that makes me ill every time I think of it and has pretty much destroyed my ability to enjoy it. Let's just say....it isn't vegetarian.

My grandma's jello would never do this. She always added so much extra gelatin that your teeth would bounce off the jello. In our family, jello is something in a bowl that you get out with a spoon (and being from Iowa, it's usually mixed with some other ingredients casserole style). Knox Blocks is the square stuff you have to saw through with a knife.

Someone should meme up that jello dance at the end.
posted by mblandi at 8:48 PM on May 3, 2011

Amazing! That's beyond bouncy, that stuff positively splashed and then boinged back up.

I'm thinking about what gives Jello its spring, and I guess it's the (literal) spring structure of the collagen molecule, which is what gelatin is made from. Each collagen molecule is made of 3 helical polypeptide chains, which are assembled into a coiled coil. Thatsa lotta boing! Gelatin is broken-down collagen, but some of that "boing" remains in the pieces.

My "big boing theory" for this video: when gelatin is cooked into Jello, the pieces tangle together so the "boing" is randomly oriented and the cooled solid is equally springy in all directions. Because everything is tightly tangled together, the solid can't crack easily like an orderly crystal. But it's springy so it stretches and then snaps back like a spring instead of breaking.

tl;dr
Gelatin is the Plastic Man of proteins.

I was watching this just now and my husband came up, put his chin over my shoulder, and started narrating in my ear: "It looks so HAPPY! It's a HAPPY LITTLE JELLO CUBE!!! WHEEEEEEEEEE! WOOOOOOOOOOOOP! WARRRRRRBBBBB WUB WUB WUB WUB.... It's DAAAAAAAAAAANCING. OOOOOOOOOOOOOBBBB BLORP BLORP BLORP BOIIIIIIINGGGGG BOIIIIIINGGGGG" and at the end when the finger pokes the cube "HEE HEE!!" in the Pillsbury Doughboy voice.

So that was my soundtrack. I kinda wish I stopped and recorded it but I was laughing too hard.

My grandma's jello would never do this. She always added so much extra gelatin that your teeth would bounce off the jello.

That reminds me of junior high, when my friends and I decreed the 'bounce test' to determine whether school lunch food was fit to be eaten. As I recall, the rule was that any food that bounced when dropped from about 6 inches above the plate was to be avoided, unless it was jello... The jello you had to watch out for was the stuff that hit the plate like a brick.
