I couldn't see what was going on with the first one until I realized that the bottle is plugged with a white disk inside the neck. The entire stream of water is drawn on the table.

These are very cool, thanks for posting! Louche mustachio's link is neat too, because you can see how the drawings look from non-perfect viewing angles. I wish Diddi's page had a few of those views too - it's always fun to see exactly how my mind is being blown.
