Made so the chicken can't possibly hold any more fat

Pressure-frying is a cooking method that uses a specially-made fryer to cook chicken and other types of foods. Similar to deep-frying, the chicken is breaded and cooked in hot oil, with the main difference being that the cooking is done under high pressure. This allows for the chicken to be cooked in less time with the result being juicier yet less greasy than traditional deep-fried chicken.

Broaster Company officially owns the Broaster trademark and has been marketing its appliances since the 1950s when the cooking method was invented. While the term "Broaster" is a registered trademark protected by law, here are plenty of companies that sell similar products that market themselves as pressure fryers.

Due to the possible dangers involved with operating these appliances by anyone who isn't properly trained, typically they are not used at home but are rather marketed to restaurants and commercial food service companies.

While broasted chicken is certainly popular in certain parts of the world (including parts of the Middle East) and the United States in particular (especially where regular fried chicken is favored), People from certain countries may view the idea of pressure-flying chicken as a uniquely American example of its unrelenting pursuit to squeeze ever more fat into its diet.

FYI, pressure frying is one of the not-so-secret techniques of a certain colonel from Kentucky.
