As to their legitimacy I can not say, but it raises an interesting question.

If you were forced to choose between one of these eggs or a Century Egg, which one would you choose?

Before you make your choice, you might want to see someone try a Century Egg for the first time. (SLYT, Ashens, "Chinese Delicacy Special," which also contains another preserved egg of unknown type.)

Personally, I don't know which I'd choose, since I'm having trouble wrapping my head around the idea that an egg cooked in urine would be a preferable choice in any situation, even when compared to something that's been in a nightmare land between pickled and rotten for who knows how long.

Also of note, the wikipedia article in my first link contains the sentence "This chemical process breaks down some of the complex, flavorless proteins and fats, which produces a variety of smaller flavorful compounds." I suppose "flavorful compounds" is one way to put it.

The Chinese use human feces as fertilizer. Should their use of human urine as a marinade come as any surprise?

FWIW, tens of millions of western women take Premarin, a hormone replacement drug named for its source: a pregnant mare's urine.

For health reasons, we go outside the species. For health reasons, the Chinese don't.

Nothing is shocking.

I've made century eggs (using this procedure). They're not bad! It's kind of neat to eat a firm-ish egg that's never been cooked. But definitely eat them with rice.

Human urine has been historically used as an effective agent for laundering clothes, and as a teeth whitener (thanks to the ammonia). This sounds kind of mild by comparison.
