Delightful! This reminds me a lot of the work by Zach King as detailed in this mefi post. Unfortunately, it looks like some of the linked youtube videos no longer work but the vines still do.

These are fun for sure, but a lot of them are no more "optical illusions" than, I dunno, the Millenium Falcon flying through hyperspace?

Optical illusions in the sense of faked with CGI in some cases.

Yeah, I feel like there should be some other term for these, because they are cool, but I was disappointed that they weren't, y'know, optical illusions. They're fun VFX/editing thingies.(TM)

These aren't optical illusions, and they're not trying to deceive, but they did remind me of the sorts of videos that Captain Disillusion debunks in detail. Born to circus performers, now a digital effects expert, he specializes in debunking and analyzing the DFX in viral videos. For example, The Magic of Will Tsai. (A couple other good ones are Australian Lightning Double Debunk and Miss Ping Debunk.)
