Like someone says, the "take that" clearly refers to "the man":

This suit was passing by and couldn't resist the pull of the bubblemob. Take that "the man"!

So the meaning isn't "take that, suit", rather "take that, The Man who tried to suck the joy out of this suited gentleman".

PLease don't delete this thread! I laughed out loud multiple times. I saw this stupid picture on Boing Boing and I swear I thought, I would love to rip on this is a public forum. Then later I look on here and all my jokes have been taken, but it was still worth it to see this picture get ripped on. The juxtaposition between idiot hipsters, played out flash mobs, teaching the "suits" how to have fun, and Cory Doctorow posting this unironically made my head explode when I first saw it.

It seems like they all showed up with cameras, in order permanently to record their own spontaneity. Maybe they wanted the bubbles only for their own enjoyment.

And it was obvious that the suit guy was going to be receptive to a bubbling flash mob by the purple tie he was wearing.
