overlap between Canadians and Americans or Italians and Austrians (especially with respect to food) narrows the breadth of the diversity that you're describingIt's not skin color that's an issue, but a narrowness of scope. The main problem that I have with the Food Network is that its subject matter is pretty constrained (Italian, some French, American classics and lite fusion) and that isn't changed if you have, say, a black chef telling us about mac and cheese or an Oriental cook rhapsodizing about General Gau's chicken.
