Under Defeat, besides being FUCKING AWESOME, has some really great explosions. (:38 second mark, and again at 1:50)

This video made me giggle with glee and delight. (especially since it closed with Border Down and Defender.... :D)

Oh I loves me some Ikaruga. Any game where an fps slowdown is orchestrated to remind you of earlier games that you played as a kid is pretty much the greatest thing ever.
