I took my schools class on this briefly. I had to drop it because I kept falling asleep and getting behind on the lame assignments. It did make me eat less meat though, since many of the samples we looked at had been left out too long. Sadly, because I dropped it, I could no longer join the Intercollegiate Meats Judging Team.
Not "Bone Roast," but "7 Bone Roast". So-called not because it has seven bones in it, but because it contains a bone shaped like the numeral 7. Also, a slight misnomer, because it's much better braised ("pot roasted") than roasted. posted by dersins at 8:07 PM on February 4, 2008
