Oh god. I was looking at this site yesterday. Cheese porn, is all I can say. Particularly the article on raclette. And yes, I think we broke it. All I can say is, bookmark and visit later. It's worth the wait.

This nice post is a perfect example of why I rarely post any more. Because I don't need to. I've actually been having more fun mentally marking posts with "I'd post that." and waiting to see who'll post it.

Also - holy cow! Look at that cheese!

This is great. Cheesemaking is something I've been wanting to get into for a while now. I've got access to farm-fresh milk, and it doesn't really sound that difficult. For those interested, use the meta-search-engine.

Great photoessay, thank you.

I've walked by some of these little Swiss hamlets. Didn't smell any cheese, but I couldn't help but wonder if any other equally wealthy nation had people living in little clumps that were only accessible on foot. Absolutely beautiful though.

Great post - cheese making is one of those magical things I rank up there with beer making, soap making, wine making, etc.

But, I found this part a bit amusing:

"...Jenny rushes out to quickly wash her cheese forms in the cows' water trough...Cheesemakers are obsessive about cleanliness or they change profession quickly. If you tolerate any kind of impurity, bacteria or hair to fall into the cheese, it will show as a nasty green or black scar within days."

So...you're obsessively clean, yet the cow trough is used to do the dish washing.

I just love how there are these swiss hippies making cheese in the mountains. Kind of like the hippies that grow pot in NoCal, but cheese.

Except they are not hippies. Which, BTW, is and always was a derogatory term.
