When he refers to his "status as a grass" (I suspect that the extra "as" was a mistake) is that Cockney slang or something? I don't get it.

British slang: the verb "to grass" means "to denounce someone" (entry at M-W). I've not heard it as a noun carrying the same sense before, though.
