From the IHOP site: "While IHOP's National Pancake Day typically takes place on Shrove Tuesday, this year the company will host its free pancake event on Tuesday, February 23, extending the fundraising window by one week to maximize donations for Children's Miracle Network."

I (the OP) ended up not getting my free stack because the local IHOP was packed to the gills with stoned college kids, and I didn't want to wait an hour and a half for a table. After reading the last two comments, I'm kinda glad I opted out.
