I hate playing the OS wars, but I can address your specific needs loquacious:
CorelDraw, CorelPainter.
I also prefer Corel to Adobe. That's why I use Corel Draw 10. Available (though no longer supported) for OS X.
Trillian 2.x. (iChat is terrible crunk.)
Adium, Fire, Proteus. All better than Trillian imho.

All the architectural firms I used to work with used VectorWorks. It suited their needs perfectly, and was able to export dwgs for us (Windows-bound) consultants. You can find screenshots here.
I have also heard good things about Ashlar-Vellum Graphite, which does have a downloadable demo.

I don't use Soulseex, but this thread mentions the need to open certain ports first (which is germane to the discussion; OS X has most ports closed be default for security reasons). I don't know which ports off hand (google it?), but you can find your port settings under System Preferences -> Sharing

As for my posting history, I'm working on it, I'm working on it. You're right though, the quality bar is high enough that its inhibited me from making more FPPs. That's just not such a bad thing IMO.

Part of the problem with tags as an organizing tool is knowing what categories are likely to contain related material. One way to help "trim the tree" is to have auto-completion on the tag form, prompting the user with pre-existing categories. I'll bet there's even a script out there to do this for you...

Consistent quoting goes beyond "spiffyness". It makes for quicker reading of threads, as your eye can quickly filter out old content. This would offset the increase in quoting, which I grant is likely.
