What is this raw beef dish from Texas or Louisiana?

I can't remember or successfully Google the name of a raw meat dish that may have originated in East Texas or Louisiana. It involved raw ground beef and possibly raw onions, peppers, and maybe egg -- very much like steak tartare. (Another comparison: as with citrus in ceviche, the "heat" of the onions/peppers was supposed to have some effect on the meat.)

Are Elmira stoves good stoves, or do they just look good?

Is anyone familiar with Elmira stoves, especially the Northstar? My mother wants to know if they are anything special besides the obvious retro-charm appeal. My instinct is to tell her if she is going to spend this much to buy a Wolf, which is a fraction of the price. I think if the Elmiras are as well-performing as Wolfs or Vikings she might want one regardless of the cost. (I found this, but it's not quite what I'm looking for.)

"This mighty garden" and its "methods of culture"

I first encountered the concept of forest gardening in Charlotte Perkins Gilman's Herland (1915) [relevant part pages 79-80]; the fictional race of women in her book have completely remade the forests to contain only beneficial and food-bearing plants, which live harmoniously together and replenish the soil naturally. This is actually being done, less than a hundred years later. More; similar, similar.

Come and take it

The president of The University of Texas at Brownsville has refused to sign a right of entry request granting access to surveyors planning the U.S./Mexico border fence. This comes shortly after Cameron County landowners were forced to allow the government access to their land. Meanwhile, landowners in Hidalgo County are filing the next wave of lawsuits.

You can't spell "terrarium" without "terrar"

When it's been gray for days and it seems like spring will never come, making a terrarium (sometimes known as a Wardian case) is a good way to keep from going mad. Your own little ecosystem can be set up easily and cheaply in almost any clear-walled, enclosed container -- even a Mason jar or a two-liter Coke bottle. (Inspired by this.)

This here giraffe

I love giraffes. Sure, some people think they're evil (previously on MeFi), but did you know that they have black tongues? Or that their scientific name hints that early viewers thought they resembled a camel/leopard mashup? That their closest living relative is the okapi? Did you know that they come with a special structure to prevent too much blood flow to the brain while drinking, and built-in pressure hose to protect the capillaries in their legs from their massive height and resulting blood pressure? This here giraffe is an amazing critter.
