Keynote presentation: how to set up presenter display so that I see it, and in the projector is the normal presentation? Also any way to launch the presentation without launching the editor?

Image filter: You know those signs you see on trails and the tops of mountains, pointing in all different directions to distant cities? Like this, or this? Looking for such an image, high enough resolution that I can photoshop it a bit and use it in a presentation.

Is there any way to encrypt an archive so that everyone (PC and Mac, maybe Linux) can open it without installing additional software?
