Seconding Omignano, there's also a "Mignano" near Arezzo and lots of small towns and villages ending in "-gnana" and "-gnano" pretty much everywhere in Italy (Omignano possibly descending from Latin 'dominicanus', or from a family name "Ominius" with -anus as a desinence). I always feel like I have a moral obligation to warn people not to get a PhD, even as someone who has one and went into academia. It's only rewarding at all to demented people like me who have never found any other socially useful application of their skills. I love coffee. I work with coffee almost every day, using both the vaunted $11,000 coffee maker (which is twenty different kinds of awesome by the way) and an even more expensive custom espresso machine. This year I'm also apparently one of the best baristas in the world (just establishing bona fides, not tooting horns).

Re adding peach flavour. If you keep the peach (or nectarine) stones after you have eaten the fruit you can prepare a very pleasant infusion by brewing the stones in water on the stove. There is a lot of flavour kept in the stone.
