It's easy to scoff at this, but as someone who lost both my hands in a juicer accident five years ago I can very much appreciate its utility.

Would make more sense to use the iPhone's camera for eye tracking, and to do input that way. This is how "real" assistive input devices have worked for some time now.
Experienced users (ie. Dr. Hawking) can type quite quickly with it too.
