Cap'n Crunch Sous Vide

Neal Stephenson has been working with the free online culinary school ChefSteps, including aiding in the design and construction of something called a Gaggle Roaster, and filming this video slicing fruit (and a water bottle) in slow motion with a sword.

I love that video in the same way I love the brief slow-mo shots in Threw it on the Ground.

I saw the ChefSteps guys do a talk at Seattle's Town Hall a few weeks ago. It was a pretty fun time. Liquid nitrogen to make ice cream, sous vide to make everything (including the ice cream).

It bore about as much resemblance to cooking that I might ever want to do as this video does. That's not a criticism, though. It was fun entertainment.
