The Tonkotsu Ramen sounds really really good, but also like it's one of those things that involves ten hours of cooking on day one and two minutes of cooking on days two through ten, assuming you have sufficient storage space. I don't have ten hours or the storage space. Alas.

I made the Tonkotsu Ramen! Total "active" time was pretty low; the real work was assembling it all. I started it in the morning, ignored it for most of the day, and we had it for dinner. I still have two packets of it in the freezer that I'm sloooowly eating at work as I feel like it. Good stuff.

Also, you can use the leftover marinade you make the pork in to prepare yummy ajitsuke tamago (marinated ramen eggs). I found a version on Serious Eats that I used as a guide. Only drawback: they do not freeze well. No, they do not. (The rest of the ramen does, but the hardboiled eggs, sadly, reheat as leathery orbs with a funky texture that is no bueno.)
