What to do with extra apricots

I know some of you don't like single-purpose kitchen appliances, but you might make an exception for this recipe.

Don't let the required time put you off.

Thanks for sharing the recipe! I saw an America's Test Kitchen segment demonstrating their version the other day. As always - they over complicate things (I mean, why do they always use disposable aluminum pans when grilling things - so wasteful and expensive!) I can't wait to bring some to the office on Monday. An instant classic.

If you find your arugula is just sitting there being useless at you, try punching it up with a brisk lox/hydrazine marinade.

I'll have to try this out the next time I'm visiting family. My parents' kitchen has all sorts of unitaskers they've accumulated over the years.

I tried this the other day, but couldn't get my gas grill to light. It was good even without being grilled, though. A little bit more work than I expected (I started the recipe without reading it all the way through first) but I plan on trying it again when I figure out what is wrong with the grill.

Having just woken up, I read all-lowercase "lox" as "lox" and began reading upthread looking for the bagel and/or cream cheese reference I'd missed....

I love this recipe! I didn't have a rocket handy, so I used a cast iron skillet instead. And instead of the apricots and apple I used two slices of rustic bread and some Havarti. Oh, and a little unsalted butter. I would definitely try it again!

Sorry, but there are NO single-purpose items in my kitchen. Like knives. All they do is chop, so when a recipe calls for anything chopped or diced or minced, I just smash it with my fists. It's really cut down on kitchen clutter.
