I wish we could get more raw milk cheeses over here. Every time I've gone to Europe, I've eaten an embarrassing amount of cheese.

Antient cheese is it? When I went on a tour of HMS Victory in the last century, one of the exhibits was piece of 200 y.o. cheese from Nelson's navy. It was well 'ard. HM Victualling Board preferred [cheap] Suffolk cheese: by some represented as only fit for making wheels for wheelbarrows.

I came across some of the videos she did for Business Insider a couple years back, really good informative and never ever "look at me eating this weird food!" so many food/travel videos fall into. Glad she's doing her own videos now, but gotta remember to eat before watching; it helps somewhat.

Yeah, I'm dying for some cheese now, I'll have to make a run at lunch to the local "world foods" store to stock up on cheese before I watch any more of her videos!

When I saw this last week I immediately went on a quest to try caciofiore. The fancy cheese shop closest to me didn’t have it, but the Italian deli had cacio roma, so I said “good enough” and bought it. (My quest standards are not high.) Cacio roma doesn’t look like the stuff in the video and probably doesn’t taste much like it either, but I imagine it’s at least a relative.

The sequel to this video shows the cheese guys making ricotta from the leftover whey from the caciofiore process. This is when I learned that “ricotta” literally means “re-cooked” because of this reuse! She got to recook a lot of the same footage from the first video, too.
