Japanese chef Takehiro Kishimoto carves fruits and vegetables. Here is an apple structure. A little bit of a background about him.

If it were me I'd have a lemon juice + water mixture in a spray bottle and I would apply as work progressed.

There seems to be a constant stream of people doing incredibly intricate things in the most unlikely media. I look forward to the post on the Tibetan monks who carve mountains with their tears.

Damn, I've seen that apple configuration done on a watermelon and been suitably impressed, but that's another level of finesse. Here I'm pleased with myself when I make a toadstool from a radish.
