this is a great link for those oh-so-tired 'what should I eat the week before a marathon' or 'what to cook at the campfire' threads on other discussion boards.

Wow. Mystery solved. I've been making Cow Udder Eclairs for years, and they've always left stuff in my teeth. I'd forgotten to soak them in Nair.

They all sound pretty interesting to me. Anyone else who's mouth is watering, get yourself a copy of Fergus Henderson's Nose To Tail Eating, and prepare to put up with some odd looks from your butcher.

One day I'll make the Rolled Pig's Spleen, one day.

I actually quite like headcheese - would be interested in the moose jaw jelly but moose is pretty strong stuff.

jack_mo, I went to St. John a few years ago on a London trip - had chitterlings, trotters, oxtail, tongue and the worst case of stomach cramps I've ever had. I guess you need to be made of hardy stuff to eat the hardy stuff.

This little treat sounds like a snack that should be served at mefi meetup between jonmc and miguel. Except it should probably be fried.

Nice find, mr_crash_davis.
