Turn Down the Carbs, Turnip the Nutrition!

If - like me - you've gained a few pounds/kilograms/stone just from reading MetaFilter this week*, maybe you'd like to consider something more healthy for a change?

Perhaps some other low-carbohydrate root vegetable instead.

Or roasted beets/beetroot (hint: peeling them is foolish and unnecessary!!) or butternut squash or jicama (additional option: use chili or harissa or za'atar powder instead of paprika).

Or perhaps crispy zucchini/courgette slices (or the ever-"popular" kale) as chips/crisps

Or really think outside the spud and consider a less-mainstream alternative like kohlrabi latkes.

Oh, the hell with it, go for broke and get fancy with that starchy boi, or go the comfort food route with plenty of bacon and dairy!

Pro Tip: In almost every case, you can easily DOUBLE if not triple the stated amount of seasonings (other than maybe salt) for better flavor. Try it and see!

*I mean, it /can't/ be from all the intriguing potato recipes I've been trying out lately, can it?

Nothing about my favorite non-potato root veg, the parsnip. Better than turnips!

They're actually (briefly) in the "more healthy" link, but I did mean to include specific recipes. So here are four such, plus a bonus silly song of Pogo named after them!

Stolen fruits are sweeter, but stolen rutabagas??

More healthy than potatoes? No such thing! Carbs are energy.

I think turnips shouldn’t have to work alone. They should recruit the rest of Brassica to help. Rutabaga, sure, but also bok choy, kohlrabi, cabbage, broccoli, rapeseed (for canola oil), and mustard.

Mustard is particularly apt because the best turnip dish I ever made was essentially turnips in mustard.

Something like this perhaps, nat?

Yes, although I’m pretty sure we used more than 1 Tbsp of mustard.

Agreed. Recipes are notorious for going very light on the seasonings. I usually measure that sort of thing with my heart, not with fractions of a teaspoon.

Since one of the articles included sweet potato, maybe it’s OK to mention some other not exactly low-carb alternatives: posted by mubba at 2:59 PM on June 24, 2022 [1 favorite]
