The Library of Congress has digitized thousands of items from Rosa Parks's personal papers collection. The collection includes materials ranging from handwritten reflections on her arrest to books she owned to family photographs and even birthday cards.

I wanted this to go up way earlier, I don't know why we always wait till the end of a month to put up stuff that's relevant to this month. Regardless, my teammate worked his butt off to put this together, all I did was flip a switch, so enjoy!

Review of Rosa Park's Peanut butter Pancakes:

Peanut butter pancakes require a small amount of additional effort to incorporate all the dry ingredients. The fat and oils from the peanut butter lubricate nicely, but take some extra effort to ensure you have mixed in all of the flour mixture. Just be sure to scrape the sides well...

With the amount of baking powder in these, they are extremely light and fluffy - to a fault. Once you have stirred the batter, wait one minute and let the powder activate, then stir again for about 1 minute. By doing so, you will break down some of the air bubbles which is necessary for the flipping process (unless you basically float your pancakes on butter on the griddle, which in that case, you can go for as light and fluffy as you want). Basically, if you dont, you'll be pushing your pancakes into the side of your pan and really mashing the edges.

I'very made three batches of this at this point in an effort to perfect a really great recipe.

The taste is outstanding.
