I wonder if on a ship that’s constantly rotating instead of fore, aft, port, and starboard it would make more sense to use north, south, east, and west. (I kind of hope not, as I really like port and starboard. Fore and aft I could take or leave though)

Well. I was screaming the whole time about safety issues, physics errors, bad rocket design, bad botany and ecosystem design, but it sure was pretty. I'm mentally going to go back to my fully pressurised gravity well with thick soupy atmosphere of meteorite shielding and shudder for a while.

Given that there's only the one passenger on the whole thing, that concession probably isn't worth much.

How would you get the water for the swimming pool into space in the first place?

I guess the same way you'd get anything else? Lots of cargo rocket launches, a launch loop, a space elevator.

Though for the beyond advanced tech needed for this kind of thing, asteroid and comet mining will be a thing, and we can get plenty of raw materials that way. Water, precious metals, etc. Once that can commence, materials from earth will no longer be necessary and we would truly begin our spacefaring phase.
