We have a micro-farm in the middle of Ireland. In 2006, we met a 60-something who was running a similar enterprise in NE Poland. He'd come and work with us for six weeks after Christmas when his gaff was frozen solid and there was nothing really useful to be done except muck out the byre. We'd pay him cash and ensure that he could get to mass every Sunday. Deal! We did that for two consecutive winters and I went on a week-long away match in Poland. His family were much more effectively self-sufficient than ours: milking a cow, fattening and curing pigs, fishing, kitchen garden. Turned out that he earned more folding money (top-sliced for airfare) from 6 weeks in the West, than he got from his entire annual cash crop (strawberries) back home.
